Nothing tastes better than homemade gazpacho soup on a warm summer day. Use fresh ingredients from the farmers market for the ultimate and freshest flavors. This recipe is Whole 30 compliant and naturally gluten-free.
Skip store bought queso that is notoriously filled with artificial ingredients and cheese-like substances (Velveeta(R) cannot call itself “cheese” – rather the FDA requires it to call itself a “Pasteurized Prepared Cheese Product”) and opt to make your own creamy spicy queso instead using fresh ingredients. The tomato in my spicy queso is from my garden and I use only organic milk and cheeses.
Most Greek salads are made with feta cheese. I don’t like feta, so I substituted fresh mozzarella instead. It worked perfectly. All ingredients should be added to taste. Simply drizzle the olive oil and balsamic vinegar, as well as sprinkle the salt and pepper to taste. Make a big or small batch depending on how many people you’ll be feeding. I made this salad when I need to feed a crowd.
