It’s almost St. Patrick’s Day, so it’s time to celebrate everything green! While I like to wear green to honor the tradition, even though I’m not Irish, I also want to celebrate with a green dip.
My new creamy avocado edamame dip hits the spot. It’s packed with a lot of flavor and nutrients from the avocado, edamame, and spinach, and it comes in a vibrant green color to celebrate all things green this month.
This dip is also delicious. The creamy richness of avocado and the goodness of edamame come together to create a lusciously smooth and flavorful dip.
If you have celiac disease, non-celiac gluten sensitivity, or gluten intolerance, you have to not only avoid gluten, a protein found in wheat, rye, and barley, but you also want to eat as nutrient-dense as possible to keep your body and brain well nourished.
Whether you’re hosting a gathering or simply craving a wholesome snack, this delightful dip should be top of mind this month.

Ingredients
You’ll need the following ingredients to make this colorful and nutrient-dense dip:
Edamame: You’ll need one cup of shelled edamame for this recipe. You can buy shelled edamame in Trader Joe’s cold foods section or in the freezer section of most grocery stores. If frozen, be sure to defrost it thoroughly before preparing this recipe.
Spinach: You’ll add a handful of spinach to this dip. Spinach is rich in iron, calcium, magnesium, potassium, and vitamins A, C, and K, contributing to the dip’s vibrant green color.
Avocado: Add one half of a ripe avocado to give this dip its smooth and creamy texture.
Garlic: Add two garlic cloves to elevate the flavor of the dip.
Lemon Juice: I use the juice from half of a lemon, but you can add more if you like it more citrusy. Adjust the amount of lemon to taste.
Olive Oil: Olive oil will also help to create a smooth and creamy dip. You’ll use four tablespoons of olive oil.
Salt: I add one-half teaspoon of kosher salt to the dip, and then if it needs more, I add it at the end. Remember, you can always add salt but can’t take it away.
Pepper: I add a few cracks of fresh ground pepper for an added kick.
Water: You’ll add about two tablespoons of water to the dip, more if needed. The water will help you achieve your desired consistency.
Instructions
Making this ultra-creamy dip is super simple to do. Make sure you have a food processor or high-speed blender.
Add the edamame, spinach, avocado, garlic cloves, lemon juice, olive oil, salt, and pepper to the food processor and blend until smooth.
Scrape down the sides as needed and continue blending until it’s near smooth. Then add water, one tablespoon at a time, until you reach the desired smooth consistency. I typically add two tablespoons of water, but you may need to add more or less to achieve the desired smoothness.
Top the dip with a few leftover edamame (optional) and serve with your favorite gluten-free crackers. My preferred brand is Crunchmaster crackers, and the crackers pictured are Crunchmaster Avocado Toast crackers – Salt & Pepper flavor.
In the end, you’ll have a rich and green dip that tastes delicious. And it doesn’t hurt that it’s nutrient-dense and packed with protein, too. Enjoy!

Leftovers: Store leftovers in an air-tight container or cover with plastic wrap in your fridge for 2-3 days.
Getting the Right Texture: The edamame doesn’t blend completely into a paste, so you’ll still have small chunks of it in the dip. The dip is smooth and creamy but not as creamy as blended avocado alone.
Finding Edamame: You’ll most likely find frozen-shelled edamame at the grocery store. Edamame is naturally gluten-free, but always check labels, just in case.

- 1/2 avocado ripe
- 2 garlic cloves
- 1/2 lemon juice
- 4 tablespoons olive oil more if needed
- 1/2 teaspoon kosher salt
- Fresh ground pepper to taste
- 2 tablespoons water add more to reach desired consistency
Instructions
- Add the edamame, spinach, avocado, garlic cloves, lemon juice, olive oil, salt, and pepper to a food processor. Blend until smooth, scraping down the sides as needed. After the mixture is blended, add water, one tablespoon at a time until you reach the desired smooth consistency.
