If you’re looking for a fun gluten-free snack or appetizer, consider this simple recipe for Air-Fryer “Cracker” Pizza Bites.

I thought that maybe the pizza bites would come out soggy, but truth be told, if you use my layering technique, the crackers I recommend, and my cooking method, you’ll have a delicious pizza bite complete with a crispy cracker crust.

The Technique: I tried many layering techniques to get the just-right texture and taste, and I think I’ve cracked the code.

I first layer the sauce on the cracker, then top it with the pepperoni and cheese. This order helps keep the cracker crunchy and the cheese crispy on top.

The Cracker: Crunchmaster makes one of the crispiest crackers around, and it’s wise to start with a crispy, sturdy cracker as the “crust” for the pizza bites.

You can use the Crunchmaster Multigrain Crackers, which are easily found at Costco and most major retailers.

But if you find the Crunchmaster Artisan Cheesy Crackers, wow, you’ll be in for an even more delicious treat. The flavor of the Artisan Cheesy Crackers truly enhances these simple pizza bites. And you get the signature crunch you expect from Crunchmaster.

The Cooking Method: I recommend air-frying the pizza bites for the best results. Air fryers circulate heat, similar to a convection oven. This ensures they cook evenly and crispy. If you use your oven instead of an air fryer, use the convection setting.

A Simple Ingredient List

Some of the best recipes require just a few high-quality ingredients. And that’s precisely what this recipe calls for. You’ll need:

  • 1 package of Crunchmaster Artisan Cheesy Crackers (4 ounces)
  • ¼ cup gluten-free pizza sauce or marinara sauce
  • ½ cup mozzarella cheese, shredded
  • 12 slices of pepperoni
  • Fresh basil, chopped (optional)

How To Make Cracker Pizza Bites

Preheat the air-fryer to 400º F. Line the air-fryer with parchment paper, if desired.

Place 12 crackers inside your air fryer or as many as will fit without overcrowding them.

Top each cracker with a small dollop of pizza sauce, one slice of pepperoni, and then a sprinkle of cheese on top.

Air fry the pizza bites for 3-4 minutes or until the cheese is bubbly and begins to brown. Sprinkle with fresh basil and other toppings, if desired.

Equipment

  • 1 Air fryer or oven

Ingredients

  • 1 package Crunchmaster Artisan Cheesy Crackers (4 ounces) or gluten-free cracker of choice
  • ¼ cup jarred pizza sauce or marinara sauce
  • ½ cup mozzarella cheese shredded
  • 12 slices pepperoni see notes
  • fresh basil chopped (optional)

Instructions

  • Preheat the air-fryer to 400º F. If desired, line the air-fryer with parchment paper.
  • Place 12 crackers inside your air fryer in a single layer about 1/2 inch apart. If your air-fryer is small, you may want to cook them in batches. Top each cracker with a small dollop of pizza sauce, one slice of pepperoni, and a sprinkle of cheese.
  • Air fry the pizza bites for 3-4 minutes or until the cheese is bubbly and begins to brown. Sprinkle with fresh basil and other toppings, if desired. 

Notes

Don’t have an air fryer? The pizza bites can be made in the oven instead of an air fryer. Preheat the oven to 400º F and bake the pizza bites for 3-4 minutes. Watch them carefully so they don’t burn. You could also microwave the pizza bites for 30-45 seconds. The result will be more soggy but still tasty.
Enjoy them fresh. The pizza bites taste best when served immediately from the air fryer or oven, but they also hold up well sitting on an appetizer tray for an hour or more. The cracker may slightly soften, but it will maintain a chew without becoming soggy.
Pepperoni options: You can use regular or turkey pepperoni. I look for pepperoni that is cut thick.
