Ingredients
For this vegan and gluten-free Cowboy Caviar recipe, you’ll need the following ingredients:
- 1 15-ounce can black beans, rinsed and drained
- 1 15-ounce can black-eyed peas, rinsed and drained
- 1 12-ounce bag of frozen corn, thawed (can use 12 ounces of fresh corn, if available)
- 1 orange bell pepper, chopped
- ½ small red onion, finely chopped
- 1 jalapeno, finely chopped (seeds and stem removed)
- 3 Roma tomatoes, chopped (also called plum tomatoes)
- ⅓ cup cilantro, chopped (fresh)
Dressing:
Here’s what you’ll need for the dressing:
- ⅓ cup olive oil
- 2 Tablespoons fresh lime juice
- 2 Tablespoons white wine vinegar
- 2 teaspoons granulated sugar
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon garlic powder
Instructions
(1) Combine the black beans, blacked-eyed peas, corn, bell pepper, red onion, jalapeno, tomatoes, and cilantro in a large bowl. Set it aside.
(2) Mix all the dressing ingredients in a small bowl, then pour the dressing over the bean mixture and toss well.
