Gluten-Free Flourless Chocolate Torte

1 pound semisweet chocolate chips (I found Kosher for Passover chips at the grocery store)

1/2 cup butter

5 large eggs, separated

1 tablespoon vanilla

1/4 cup sugar

Dash of cocoa powder

Chocolate frosting/glaze - optional

Whipping cream - optional

Raspberries - optional


Preheat oven to 250 degrees F.

Prepare a 9 inch springform pan by adding a circle cut-out of parchment paper to the bottom, then generously coating the bottom and sides with nonstick cooking spray. Dust pan with cocoa powder. Set aside.

Beat egg whites with mixer at high-speed until soft peaks form.

Gradually add sugar and beat until stiff peaks form. Set aside.

Melt chocolate and butter in a large saucepan over low heat.

Beat egg yolks with vanilla in a large bowl.

Add chocolate to yolk mixture and mix on low setting until well blended.

Fold in egg white mixture into egg yolk mixture - adding about one-third at a time.

Add mixture to well-greased springform pan. Place on a cooking sheet and bake in oven for 1 hour to 1 hour 15 minutes until toothpick inserted in center comes out almost clean.

Cool in pan, then remove sides of springform pan. Invert torte onto cake platter and remove parchment paper and bottom of springform pan.. Decorate to your liking!
