OK, so who here doesn’t love BBQ chicken?
I know none of you raised your hands. BBQ chicken is the best!!
Just the thought of BBQ chicken makes my mouth water. How about you?
So last week, I set out to make a delicious, sweet and of course gluten-free BBQ chicken recipe. My recipe was inspired by a cookbook sent to me called, Perfect for Pesach*, by Naomi Nachman. While the cookbook says “Pesach” in the title, it is far from being a Passover cookbook. In fact, just about every recipe in the book is gluten-free. I’m totally obsessed with the book!
In the recipe, Nachman makes Coke Chicken. I just couldn’t motivate myself enough to purchase Coke, which contains high fructose corn syrup, genetically modified ingredients and artificial stuff, so I opted for a cleaner version of cola from Hansen’s*. Hansen’s cola is caffeine-free and is made from cane sugar vs. high fructose corn syrup and contains no artificial ingredients. (Do not use diet soda – the sugar is needed to caramelize the top of the chicken.)
In addition to Hansen’s cola, I wanted to add only clean ingredients to my gluten-free BBQ chicken recipe. I used organic raspberry jam by Crofter’s* and sweet BBQ sauce by Stubb’s*, which is certified gluten-free. All these sweet ingredients blend together so nicely – and they help make the skin crispy while the inside of the chicken stays nice and juicy.
If you make this gluten-free BBQ chicken recipe for Passover, make sure none of the ingredients you use contain corn syrup. Corn products are forbidden on Passover. Many of these products (BBQ sauce, raspberry jam and cola) can be purchased “Kosher for Passover” too if that is something you follow strictly.
I didn’t make this recipe for Passover, per se, so I enjoyed it with fresh sweet corn! (Hey, I took out the high fructose corn syrup in the ingredients, but I still love to munch on sweet corn on the cob!)
I made this recipe twice – once for my family (they loved it!) and then again for a dinner party with two other families. I got so many compliments on the chicken at my dinner party. One of the men at my dinner party is a restaurateur. He knows good food and was extremely complimentary of the chicken (and loved the entire menu – gluten-free tastes just as good if not better, right!).
With all the good mojo coming my way, I decided this gluten-free BBQ chicken recipe was definitely worthy of adding to the Good For You Gluten Free blog.
You will seriously get mad props when you make this… so get ready to soak in all the compliments about what an amazing gluten-free cook you are. You don’t have to tell them how easy this gluten-free BBQ chicken recipe is to make. It’ll just be our little secret.

- 4-6 bone-in chicken thighs
- 1 Tbsp. garlic powder
- 1 tsp. Kosher salt
- Fresh ground pepper
- 1 cup gluten-free BBQ sauce
- 1 cup raspberry jam
- 1 cup soda (I used Hansen's Natural Soda - no diet sodas please)
Preheat oven to 400 degrees F.
Place chicken thighs in a large casserole dish and sprinkle with garlic powder, salt and pepper.
In a large bowl, add BBQ sauce, jam and soda. Mix well.
Pour mixture over chicken.
Place chicken in oven for 1 hour and 15 minutes, basting the chicken every 20 minutes with the juices.
Remove from oven and serve with corn on the cob, brown rice and other healthy fixings.
