This BBQ Coke Chicken recipe is perfect as a weeknight meal but fancy enough to serve for a key holiday. It bakes up beautifully in your own in 1 hour 15 minutes, although it tastes like it's been cooking all day.

Place onions at the bottom of a large casserole dish, then top with chicken pieces. Sprinkle chicken with garlic powder, salt and pepper. Set aside.
In a large bowl, combine BBQ sauce, jam and soda and mix well. Pour mixture over the chicken pieces.
Place chicken in oven for 1 hour and 15 minutes, basting the chicken mid-way through with its own juices.
The chicken is done when it is cooked through, no longer pink, and registers at 165º F. Remove chicken from the oven and serve with rice, potatoes, vegetables and/or other fixings.

The chicken needs the sugar to help caramelize the skin.If you don't want to exclusively use chicken thighs, you can use a whole cut up chicken or any bone-in chicken parts you like (breasts, drumsticks, etc.). Just watch the cooking time carefully as to not overcook (and thereby dry out) the chicken breasts.After the chicken bakes, the gravy will form a yellow fat layer on top. Use your spoon to skim the top of the gravy and remove some of that fat layer. You can also use a paper towel to skim the top as the paper towel will soak up the fat as well.
