Gluten-Free Freschetta Pizza with Mediterranean Cucumber Salad

If you have to give up gluten, a protein found in wheat, barley, rye and sometimes oats, for medical reasons, such as a celiac disease or gluten sensitivity diagnosis, then you probably at one time or another felt like you had to give up pizza, too.

Most pizza is made from wheat flour, and even gluten-free pizza, which is available at some restaurants, isn’t quite safe to consume due to the high probability of cross contamination. Most people serious about eating gluten free rarely eat pizza outside of the home.

While you may miss the convenience of takeout or delivery pizza, you certainly don’t have to give up on pizza altogether thanks to Freschetta pizza. In fact, Freschetta now makes three safe, tasty and easily accessible gluten-free frozen pizzas that will satisfy any pizza craving.

Safety: In terms of safety, gluten-free Freschetta pizzas are certified gluten free by the Gluten-Free Food Program (GFFP), which is a third-party certifying agency endorsed by the National Celiac Association. The GF certification gives you an extra layer of confidence when enjoying the Freschetta pizza.

Taste: In terms of taste, Freschetta makes a mighty tasty pizza. In fact, years ago I taste-tested dozens of frozen gluten-free pizzas, and Freschetta has always been at the top of my favorite gluten-free pizza list.

The Freschetta pizza signature yeast-leavened crust, which is made from a combination of rice flours and tapioca starch, cooks up crispy yet still has a doughy bite to it. The sauce also has a wonderful pizza flavor. And of course, Freschetta pizza only uses real mozzarella cheese. If you get the four cheese pizza variety, it also contains asiago, fontina and parmesan, which makes a tasty cheese combination!

Accessibility: In terms of accessibility, Freschetta pizza is easy to find in many grocery stores across the U.S., including select Walmart, Target and Safeway stores. Check the store locator on the Freschetta website to find a grocery store that carries it near you.

Best of all, if you can’t find it near you, you can now order Freschetta pizza online. Your order will be shipped with dry ice and will be ready to pop into your freezer or oven when it arrives at your house.

Please note not all Freschetta pizzas are gluten free, so be sure to look for specially labeled boxes. You can find gluten-free Freschetta pizza in the following varieties:

  • Four Cheese
  • Pepperoni
  • Spinach and Roasted Mushroom

What Pizza Night Looks Like at My House

When I don’t feel like cooking, I’m always relieved when I find that I have a few boxes of gluten-free Freschetta pizzas in my freezer. I try to always keep them in stock.

I simply pop 1-2 pizzas in a hot oven and cook it directly on the center rack for 10-13 minutes until the cheese bubbles and turns slightly brown. Be sure to follow the instructions on the box and watch your pizza carefully so it doesn’t overcook. Oven temperatures can vary.

To add pizzazz to pizza night, I love to make my Mediterranean Cucumber Salad, which I serve with a homemade Greek Vinaigrette dressing.

My kids love cucumbers and salads and anything green (I’ve trained them well!), so I knew they would be all over this. And I rarely serve a meal without something green on my plate anyway.

While the oven preheated and the pizza cooked and cooled, I prepared my Mediterranean Cucumber Salad by chopping the following ingredients and adding them to a serving bowl (except for the feta):

  • 1 English cucumber, cubed
  • ¼ red onion, sliced
  • 2 bell peppers (red and yellow), diced
  • ½ cup Kalamata olives
  • 1 15-ounce can of garbanzo beans, drained and rinsed
  • ½ cup feta cheese crumbles (more if desired)

For the Greek vinaigrette, I combined the following ingredients in a glass jar:

  • 1/3 cup olive oil
  • 1 tbsp red wine vinegar
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1 large garlic clove, minced
  • 3/4 tsp kosher salt (more to taste, if needed)
  • Fresh cracked pepper

I then whisked all the dressing ingredients together and set it aside. Just before we ate, I poured the dressing over the salad, added the feta crumbles, and mixed everything together.

Between the beautiful Mediterranean Cucumber Salad and the savory four-cheese gluten-free Freschetta pizza, I was able to prepare a no-fuss dinner in about 15-20 minutes.

Remember, you don’t have to give up pizza night just because you can’t eat gluten. Get a little creative and don’t be afraid to heat up a frozen pizza and chop a few vegetables. No need to overthink dinner tonight because Freschetta pizza has you covered.

Mediterranean Cucumber Salad

This Mediterranean Cucumber Salad hits all the right notes with crunchy cucumbers and bell peppers, savory chickpeas and kalamata olives, and a tangy Greek vinaigrette on top. I love to make it as a healthy side dish on pizza night.

Ingredients

Salad

  • 1 English cucumber cubed

Vinaigrette

  • 1/3 cup olive oil
  • 1 tbsp red wine vinegar

  • 1 large garlic clove minced
  • 3/4 tsp kosher salt more to taste, if needed
  • Fresh cracked pepper

Instructions

  • Prepare all the salad ingredients and place all the ingredients, except for feta, in a large serving bowl.
  • Whisk all the dressing ingredients together in a glass jar until smooth. Pour the dressing over the salad just before serving. Add feta crumbles and toss.

Notes

When I serve this salad to guests, I usually put the feta on the side because not everyone likes feta or some people have a dairy intolerance or aversion.
You can save leftover salad in a storage container for 1-2 days. If the mixture starts to ferment, discard it. The salad is best enjoyed immediately after dressing the salad.

    These are my FAVORITE GF Pizzas. I LOVE the pepperoni one and I add extra cheese and sometimes Canadian bacon. I also eat it with our homemade sour kraut. LOVE the flavor profile and combination.
