What Pizza Night Looks Like at My House
When I don’t feel like cooking, I’m always relieved when I find that I have a few boxes of gluten-free Freschetta pizzas in my freezer. I try to always keep them in stock.
I simply pop 1-2 pizzas in a hot oven and cook it directly on the center rack for 10-13 minutes until the cheese bubbles and turns slightly brown. Be sure to follow the instructions on the box and watch your pizza carefully so it doesn’t overcook. Oven temperatures can vary.
To add pizzazz to pizza night, I love to make my Mediterranean Cucumber Salad, which I serve with a homemade Greek Vinaigrette dressing.
My kids love cucumbers and salads and anything green (I’ve trained them well!), so I knew they would be all over this. And I rarely serve a meal without something green on my plate anyway.
While the oven preheated and the pizza cooked and cooled, I prepared my Mediterranean Cucumber Salad by chopping the following ingredients and adding them to a serving bowl (except for the feta):
- 1 English cucumber, cubed
- ¼ red onion, sliced
- 2 bell peppers (red and yellow), diced
- ½ cup Kalamata olives
- 1 15-ounce can of garbanzo beans, drained and rinsed
- ½ cup feta cheese crumbles (more if desired)
For the Greek vinaigrette, I combined the following ingredients in a glass jar:
- 1/3 cup olive oil
- 1 tbsp red wine vinegar
- Juice of 1 lemon (about 2 tbsp)
- 2 tsp Dijon mustard
- 1 tsp dried oregano
- 1 large garlic clove, minced
- 3/4 tsp kosher salt (more to taste, if needed)
- Fresh cracked pepper
I then whisked all the dressing ingredients together and set them aside. Just before we ate, I poured the dressing over the salad, added the feta crumbles, and mixed everything together.
Between the beautiful Mediterranean Cucumber Salad and the savory four-cheese gluten-free Freschetta pizza, I was able to prepare a no-fuss dinner in about 15-20 minutes.
Remember, you don’t have to give up pizza night just because you can’t eat gluten. Get a little creative and don’t be afraid to heat up a frozen pizza and chop a few vegetables. No need to overthink dinner tonight because Freschetta pizza has you covered.
Mediterranean Cucumber Salad
Ingredients
Salad
- 1 English cucumber cubed
- ¼ red onion sliced
- 2 bell peppers red and yellow, diced
- ½ cup Kalamata olives
- 15 ounce can of garbanzo beans drained and rinsed (1 can)
- ½ cup feta cheese crumbles more if desired
Vinaigrette
- 1/3 cup olive oil
- 1 tbsp red wine vinegar
- Juice of 1 lemon about 2 tbsp
- 2 tsp Dijon mustard
- 1 tsp dried oregano
- 1 large garlic clove minced
- 3/4 tsp kosher salt more to taste, if needed
- Fresh cracked pepper
Instructions
- Prepare all the salad ingredients and place all the ingredients, except for feta, in a large serving bowl.
- Whisk all the dressing ingredients together in a glass jar until smooth. Pour the dressing over the salad just before serving. Add feta crumbles and toss.

These are my FAVORITE GF Pizzas. I LOVE the pepperoni one and I add extra cheese and sometimes Canadian bacon. I also eat it with our homemade sour kraut. LOVE the flavor profile and combination.
