No-Bake Gluten-Free Cookies with Chocolate, Peanut Butter and Oats

No-Bake Gluten-Free Cookies with Chocolate, Peanut Butter and Oats

These gorgeous no-bake gluten-free cookies satisfy your intense chocolate cravings without breaking the calorie bank. They’re made from whole, good for you ingredients and a lot of love, and they only take just a few minutes to make. These cookies are perfect for when you need a quick bite of chocolate sweetness. I love sweets, but I’m working on creating some sweets recipes that have more healthful ingredients.

Call it my next stage of gluten-free baking. I’m not just trying to recreate some of my favorite cookies and cakes, but now I’m trying to recreate them with a more healthful spin all while satisfying my wicked sweet tooth.

Today I want to show you how to make a satisfying cookie that doesn’t break the calorie bank after you eat one. In fact, each cookie is only 74 calories. Sweet!

Ingredients

You’ll need just a few simple ingredients to make my no-bake gluten-free cookies, including:

  • 2/3 cup sugar (you can an equal amount of ZenSweet Monk Fruit Sweetener in lieu of sugar)
  • 1/2 cup unsweetened cocoa
  • 2 tbsp dairy-free butter
  • 1/2 cup almond or cashew milk
  • 2 1/2 cups quick-cook gluten-free oats
  • 3/4 cup low-sugar peanut butter
  • 1 tsp vanilla
  • Dash of powdered sugar, optional

Instructions

Here’s how to make these delicious, no-bake gluten-free cookies:

Step 1: Combine sugar, cocoa, butter and milk in a small pot and heat on low until butter is melted and sugar is dissolved.

Step 2: Remove the pan from the heat and then mix in the oats, peanut butter and vanilla until all the ingredients are well combined. You may need to get your hands in there to fully mix everything together.

Step 3: Use slightly wet hands to form about 35 small cookies. Roll cookies into a ball and then flatten them.

Step 4: Place cookies in the fridge to cool and set into place. They’re ready to enjoy once they’re cool to the touch.

The result is a chocolatey cookie that is soft, satisfying, and quite addicting. The peanut butter binds all the ingredients together to form this perfect, comforting cookie. No oven required!

FAQs

Can you use a sugar substitute? Yes, I made these with 2/3 cups of ZenSweet Monk Fruit Sweetener (a sugar-free sweetener) and it turned out great. No taste difference.

How do you store these cookies? These cookies store well in a zip top bag and last for several days in the fridge.

No peanut butter? You can use any nut butter you like. Look for low-sugar options or adjust the amount of sugar you use in the first place.

What oats do you recommend? I highly recommend using Bob’s Red Mill gluten-free quick cook oats. Bob’s Red Mill has good processes in place to ensure its oats are free from gluten. Ingredients

  • 2 tbsp dairy-free butter
  • 1/2 cup almond or cashew milk
  • 2/3 cup sugar *or monk fruit sweetener
  • 1/2 cup unsweetened cocoa
  • 3/4 cup low-sugar peanut butter
  • 1 tsp vanilla
  • 2 1/2 cups quick cook gluten-free oats

Instructions

  • Combine butter, milk, sugar, and cocoa in a small pot and heat on low until butter is melted and sugar is dissolved. Remove from heat.
  • Add the peanut butter and vanilla to the chocolate mixture and mix until well combined. Add oats and mix again until the oats are coated. You may need to use your hands and/or a spoon to incorporate everything well.
  • Use slightly wet hands to form about 35 small cookies. Roll into mini balls, then slightly flatten each ball into a round cookie.
  • Place each cookie on parchment paper and cool in the fridge before enjoying.

Notes

*I have made these with ZenSweet Monk Fruit Sweetener and they taste identical only with no added sugar.
Store no-bake gluten-free cookies in a zip top bag in your fridge. They will last for several days and still taste great.
Be sure to use gluten-free labeled oats. While oats are naturally gluten free, they are cross contaminated with wheat during the growing and harvesting. Only labeled and/or certified gluten-free oats should be used. I recommend Bob’s Red Mill Gluten-Free Quick Cook Oats.
These cookies are meant to be mini cookies, so shape them into about 35 balls and flatten. You could make them larger cookies as well.
