As you may know already, I don’t celebrate Easter because I’m Jewish. In fact, this time of year I’m busy preparing for Passover.
However, I know that many of my gluten-free friends celebrate this important holiday, and I want to help you celebrate Easter in style.
I enlisted the help of my friend, Megan, who celebrates Easter, in designing this pretty pastel Easter-themed snack board.
Megan has an eye of for style and provided me with all sorts of great suggestions to make this epic charcuterie board shine brightly for Easter.
Essentials for an Easter Charcuterie Board
Here’s what my epic, gluten-free Easter charcuterie board includes – note the beautiful colors as well as the variety of flavor and textures:
1. White Chocolate Covered Crackers
What charcuterie board would be complete without crunchy and salty crackers to add texture richness? I don’t think you can call it a charcuterie board a “charcuterie board” without the crackers.
For my gluten-free friends, I highly recommend using Crunchmaster multi-seed crackers. These crackers taste amazing, are made with clean, gluten-free ingredients, and work well as-is or when dipped in white chocolate.
To add a touch of sweetness to the crackers, and in sticking with my Easter theme, I dipped some of my Crunchmaster crackers in white chocolate and then drizzled each cracker with a little pink chocolate.
To do this, simply melt 1 cup of white chocolate in your microwave in 30 second increments, stirring in between. It’ll take about 1-2 minutes total to melt the chocolate.
Then dip each cracker in the chocolate and set it on wax paper to dry.
To make the pink drizzle, melt an additional 1/4 cup white chocolate chips and stir in some pink food coloring. Then place the pink chocolate into a piping bag and drizzle it atop the crackers. Let the crackers dry, at room temperature, until set.
2. Chocolate Covered Strawberries
I definitely have a penchant for including strawberries on my charcuterie boards. I even included chocolate-covered strawberry footballs in my Super Bowl snack board. They just work so well in my snack boards, and are always a big hit!
I recommend dipping the strawberries in chocolate, and, once they’re dry, using the same pink pastel white chocolate drizzle used to coat the crackers to coat the strawberries. Don’t they look pretty?!?
3. Pastel Candies
You’ll definitely need some pretty candies for your Easter charcuterie board. Jelly beans are an Easter staple, as are pastel-covered chocolate-coated candies. Just make sure any candies you use are labeled gluten free.
4. Mini Donuts
These pastel-glazed mini gluten-free donuts are the bomb, and I love making and eating them.
Last year I bought a mini-donut maker, which makes it ultra-easy to quickly whip up a batch of mini gluten-free donuts.
To make the donuts, you can use the following simple recipe, which works in your mini donut maker:
- 2 cups flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 tsp vanilla
I whisk together all the ingredients in a medium bowl, then work in batches cooking the donuts in my mini-donut maker.
Once the donuts cool, I top each donut with icing. To make the icing, combine 1 cup of powdered sugar + 1/2 tsp of vanilla + 1 tbsp of water until it’s a thick but smooth consistency.
Split the icing into different bowls in order to add drops of different food coloring to each bowl. Mix well before dipping each mini donut into the icing. Gently tap the donuts to remove any excess icing before placing them on a wire rack to allow the excess icing to drip off and until the icing hardens and sets.
5. Cookie Dough Hummus
For the cookie dough hummus, I simply used my edible cookie dough recipe, which is made with chickpeas, peanut butter, maple syrup and vanilla extract.
Please note, instead of using dark chocolate chips, I used white chocolate chips instead. On top of that, to make the “hummus” extra Easter festive, I topped it with colorful sprinkles.
Assemble Your Snack Board
Will all the ingredients ready to go, it’s time to arrange everything on a pretty whiteboard or serving tray.
The white will help the pastel-colored foods shine and truly showcase the beauty of this dessert snack board.
