Microwave Chocolate Pudding Recipe & Gluten-Free Instant Pudding Brands

Microwave Chocolate Pudding Recipe & Gluten-Free Instant Pudding Brands

I love chocolate pudding and have a feeling you do too. Did you know that you only need six ingredients to make your own chocolate pudding at home? On top of that, you can use clean ingredients and avoid all the chemical add-ins you find in store-bought pudding. I hope you enjoy this microwave pudding recipe as much as I do. I know when I eat chocolate pudding, I really eat chocolate pudding. I’m using my fingers and tongue to scrape out every bit of chocolate pudding I can find in the bowl. 

Since going gluten free in 2012 due to a celiac disease diagnosis, I wasn’t sure if pudding would be in my future.

Is Jell-O Pudding Gluten Free?

The Jell-O pudding is not labeled as gluten free, although it does not contain any gluten that I can see.

However, it does contain a lot of weird ingredients that I don’t know, and after diving into this ingredient list, I no longer want to eat Jello-O pudding.

Here’s what the Jell-O chocolate pudding ingredient list looks like:

SUGAR, MODIFIED CORNSTARCH, COCOA PROCESSED WITH ALKALI, DISODIUM PHOSPHATE (FOR THICKENING), CONTAINS LESS THAN 2% OF NATURAL AND ARTIFICIAL FLAVOR, TETRASODIUM PYROPHOSPHATE (FOR THICKENING), SALT, MONO- AND DIGLYCERIDES (PREVENTS FOAMING), ARTIFICIAL COLOR, RED 40, YELLOW 5, BLUE 1.

Is Organic Pudding Gluten Free?

I thought I was being clever when I bought the Organics brand chocolate pudding. The ingredient list looks so clean and pretty:

ORGANIC SUGAR, ORGANIC CORNSTARCH, ORGANIC COCOA POWDER, SEA SALT

However, the pudding isn’t labeled gluten free either, and I got sick after eating it.

I decided to tested Organics pudding with my Nima Sensor after the fact to see if it might have contained hidden gluten, and guess what? The Nima Sensor found gluten!

Instead of eating store-bought chocolate pudding with questionable ingredients, I decided to make my own pudding at home with safe, gluten-free ingredients.

And my recipe for microwave chocolate pudding is a great way to ease into making the homemade stuff.

This recipe requires only a few key ingredients, a few minutes in the microwave, and a few seconds to inhale it because, yes, it’s that good!

Simple Microwave Chocolate Pudding made with 6 Ingredients - Good For You Gluten Free

Ingredients Needed

Below are the ingredients you need to make my microwave chocolate pudding recipe:

  • 1/4 cup unsweetened cocoa powder
  • 2 Tbsp cornstarch
  • 1 1/2 cups milk
  • 1/3 cup sugar
  • 1 tsp vanilla
  • 1/8 tsp ground cinnamon
  • Sprinkles for decoration (optional)

How to Make

Here’s how to make this recipe in four (4) easy steps:

Step #1: Combine cocoa and cornstarch in a microwave safe bowl, then add milk and whisk mixture until well combined.

Step #2: Microwave the chocolate mixture on high for two minutes, then stir it. Put it back into the microwave and cook for another three minutes, stirring every minute. The mixture should have the texture of pudding; if not, microwave it for another minute at a time until it thickens.

Step #3: Add the sugar, vanilla and cinnamon into the warm mixture and stir well until all ingredients are combined well. Let the mixture stand for five minutes, then stir again.

Step #4: Divide pudding mixture into 4 small bowls or cups, top with sprinkles (optional), and dig in. You can served the chocolate pudding warm or cold. Store uneaten pudding in the fridge.

Gluten-Free Pudding Brands

If you’re not up for making your own pudding, I recommend purchasing a chocolate pudding that is labeled gluten free or certified gluten. Such transparent gluten-free labeling will give you confidence that the product is indeed free from gluten.

The only instant pudding brand that I have found to be labeled “gluten free” is Simply Delicious Pudding. This brand is labeled “gluten free” and is free from all eight of the most common allergens (wheat, tree nuts, peanuts, dairy, soy, shellfish and soy).

Ingredients

Notes

I used 2% milk to make this, but it should work with the milk of your choice. Adjust ingredients to get the right texture. Add more cornstarch if it’s watery, more milk if it’s too thick.
Be sure to keep stirring the pudding mixture every minute while microwaving. This will ensure you get the right texture and don’t burn the pudding.
If you add sprinkles, be sure to check labels to ensure they’re gluten free. The sprinkles might melt if you put them on top of the warm or hot pudding.
This makes 4 small cups of chocolate pudding. Double the recipe if you’re sharing it with your family.
