No-Fuss Gluten-Free Flatbread Pizza Recipe

No-Fuss Gluten-Free Flatbread Pizza Recipe

It’s National Pizza Day and what better way to celebrate than by sharing a new [flatbread] pizza recipe with you.

If you don’t feel like making your own gluten-free pizza crust from scratch, you can instead use a wonderful gluten-free flatbread mix by Bob’s Red Mill.

The flatbread mix makes it so easy to make homemade flatbread in just a few minutes with little fuss or clean up.

And it looks so pretty too – perfect for romantic date nights or for a quick and easy warm lunch.

In this post, I’ll show you how to make a delicious shortcut version of a gluten-free flatbread pizza. It takes only a few minutes to make and requires just a few simple ingredients.

Gluten-Free and Grain-Free Flatbread Pizza - Good For You Gluten Free

Step #1: Gather all your ingredients

First, gather all your ingredients and make sure you have everything you need on hand. For the gluten-free flatbread crust, you’ll need:

  • 2 large eggs
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 Grain-Free Bob’s Red Mill Flatbread Mix (7.05 ounce package)

The mix is made from a blend of blanched almond flour, cassava flour, arrowroot starch, coconut flour, tapioca flour, salt, cream of tartar, and baking soda.

For the pizza topping, you’ll need:

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp oregano
  • 1/2 cup marinara sauce
  • 4-6 oz fresh mozzarella, sliced
  • 1/2 cup cherry tomatoes, sliced in half
  • 1/4 cup fresh basil

You’ll also want to preheat your oven to 425º F and line a baking sheet with parchment paper. You’re now ready to get started!

Step #2: Make the Flatbread Mix

To make the flatbread crust, combine 2 eggs, 1/4 cup olive oil and 1/4 cup of water in a medium-sized bowl. Mix everything until well combined. The batter will be sticky. Give it five minutes to rest in the bowl before handling.

Now it’s time to shape the flatbread crust into a large rectangle. To do this, lightly wet your hands with water, then scoop the flatbread dough into your hands and gently form it into an oblong ball.

Place the dough ball on the parchment paper and gently use your hands to shape it into a large rectangle that is approximately 12” long and 6” wide.

Now your flatbread crust is ready for the pizza toppings! You’re doing great.

Step #2: Par Bake Flatbread Crust

Combine 1 tbsp olive oil, minced garlic, and oregano together in a small bowl, then brush this oil mixture over the flatbread until evenly coated.

Now par bake the flatbread for 10 minutes so it’s only partially cooked. Remove it from the oven.

Step #3: Add Toppings and Bake

Top the gluten-free flatbread crust with marinara sauce, leaving about ½ inch along the perimeter for the crust.

I decided to make my flatbread pizza [mostly] caprese-style. A caprese-style pizza includes slices of fresh mozzarella, tomatoes, fresh basil, and olive oil, balsamic or Italian dressing drizzle.

I topped the flatbread with fresh mozzarella (use about 4-6 ounces depending on how cheesy you like it) and cherry tomatoes.

I then baked the pizza for an additional 10-15 minutes or until the mozzarella melted and the crust became golden. I also added fresh basil leaves.

It’s important to let the pizza sit for 2-3 minutes to cool before slicing. It will cut more cleanly when it’s slightly cooled.

Step #4: Slice and Eat

Cut the flatbread pizza into 8 individual pizza wedges as pictured:

Now dig in! You’re going to love the chewy texture of the flatbread crust along with all the delicious, cheesy toppings. There’s no way anyone will be able to tell this flatbread is gluten free and grain free!

Please note the flatbread mix is dairy free as is. My recipe, however, includes cheese, which you should omit if you’re eating dairy free.

Ingredients

Flatbread Crust

  • 2 large eggs

Instructions

  • To shape the flatbread crust, lightly wet your hands. Scoop the flatbread dough in your hands and form into an oblong ball. Place dough on the parchment paper and gently use your hands to shape it into a large rectangle that is approximately 12” long and 6” wide.

  • Par-bake flatbread for 10 minutes. Remove from the oven.
  • Top the par-baked flatbread with marinara sauce, leaving about ½ inch along the perimeter for the crust. Add fresh mozzarella and cherry tomatoes until covered.
  • Bake flatbread pizza for an additional 10-15 minutes or until the mozzarella is melted and crust is golden. Remove from the oven and top with fresh basil.
  • Let the flatbread pizza sit for 2-3 minutes before slicing into 8 slices and serving.

Notes

Use 4-6 oz of fresh mozzarella for this pizza. If you like your pizza extra cheesy use the full 6 ounces.
Always check your pizza around the 10 minute mark to be sure your pizza does not burn. Depending on what type of mozzarella you use, your cheese may melt quicker or slower.
Use a mix of colors for your cherry tomatoes for a beautiful presentation.
You can leave the fresh basil whole or slice it into thin ribbons.
