Berries are naturally sweet, so it’s no wonder this Gluten Free Mixed Berry Crisp recipe doesn’t call for a any white sugar, and just a bit of brown sugar instead. The sweetness from the berries shines through and there are so many wonderful flavors bursting in your mouth with every bite.
Now I know what you’re thinking… berries aren’t in season right now! You’re right, they aren’t. But that doesn’t mean I don’t crave delicious, sweet berries year round. Believe it or not, this recipe is wonderful with frozen mixed berries, enabling you to enjoy this warm treat even if it’s cold outside!
I found this recipe in a cookbook my friend Julie gave me for my birthday a few years ago. It’s called, “Gluten Free – 3 Books in One” – it doesn’t appear to be in print anymore (not sure!), but the cookbook is filled with practical and delicious recipes. Please note that I did made a few changes to the initial recipe. I used arrowroot instead of tapioca flour (I don’t keep tapioca flour in the house), and instead of butter, I used Earth Balance natural buttery spread sticks (you can buy Earth Balance sticks in a natural grocery store – I found them in Sprouts). The Earth Balance tubs are found at most other grocery stores and work too.
This recipe is really, really, really easy to prepare and leaves you wishing you had doubled it so you can enjoy it for a few days!
