Instructions
Add the edamame, spinach, avocado, garlic cloves, lemon juice, olive oil, salt, and pepper to a food processor. Blend until smooth, scraping down the sides as needed. After the mixture is blended, add water, one tablespoon at a time until you reach the desired smooth consistency. I typically need two tablespoons of water, but you may need to add more or less to achieve the desired smooth consistency.
Top with a few edamame (optional) and serve with Avocado Toast crackers by Crunchmaster for a delicious, nutrient-dense, and protein-rich snack.
Notes
Leftovers: Store leftovers in an air-tight container or cover with plastic wrap in your fridge for 2-3 days.Getting the Right Texture: The edamame doesn't blend completely into a paste, so you'll still have small chunks of it in the dip. The dip is smooth and creamy but not as creamy as blended avocado alone.Finding Edamame: You'll most likely find frozen-shelled edamame at the grocery store. Edamame is naturally gluten-free, but always check labels, just in case.Where to Find the Crackers: Crunchmaster crackers in grocery stores and online. Check the company's store locator to find a location near you.
