Instructions
Add sliced peaches, granulated sugar, brown sugar, and lemon juice in a small pot. Stir until well combined.
Turn the heat to medium-high and bring the mixture to a boil.
Reduce the heat to medium-low and allow the peaches to simmer for 25 minutes, stirring frequently.
Allow the mixture to cool before adding the jam to mason jars. Place the jars in your fridge. The jam will be fully set in 24-48 hours.
Notes
I made the peach jam with ½ cups and ¾ cups of granulated sugar. We preferred the ¾ cup version when we used the jam paired with cheese and crackers. However, we preferred the less sweet version (½ cup of sugar) when using the jam for a sandwich.I recommend adding ½ cups of sugar, tasting it, and adding more to taste. Some peaches are much sweeter than others, so the amount of sugar you add may depend on the sweetness of the peach.This recipe makes about 18 tablespoons or 16-18 oz in total. I was able to fill three 4-ounce mason jars. The amount of jam will vary depending on the peach size.
