Add all ingredients to your slow cooker. The salsa should mostly cover the chicken.

Use a sugar-free salsa, like Pace Picante sauce, to make this recipe Whole30 compliant. If you're not worried about being Whole30 compliant, use any salsa of your choice. Check labels to ensure it's gluten free.I recommend boneless, skinless chicken thighs or bone-in chicken thighs as an alternative (skin removed if possible to avoid making this recipe too greasy). I find boneless, skinless thighs at Costco. You could use chicken breasts, although the meat won't be as good or tender.The salsa should just about cover the chicken thighs. I use about 1 1/2 lbs of chicken thighs, which is about 8 pieces.Serve this recipe as a hearty stew, or over a sweet or baked potato. If you're not worried about being Whole30 compliant, you can serve it over rice. This recipe is perfect for meal prepping.
