Put flour on your mixing board or countertop. Make a valley in the middle of the flour.
Add the egg yolks, egg, milk and oil into the valley of the flour.
Using a fork, start to slowly incorporate the dry ingredients with the wet ingredients.
Ditch the fork and start to kneed the dough by hand, working all the ingredients together.
Add a bit of water as needed to get the dough to the correct consistency. It shouldn't feel wet, but all the dry ingredients should be well incorporated.
Pack dough into a dough ball, then cover with plastic wrap and refrigerate for about 1 hour to get the dough to an even temperature throughout.
Split the dough into 4 even portions, work it through your pasta machine as seen in the video. (You can also roll and cut it by hand)
Add noodles to salted, boiling water for about 6-8 minutes until cooked to taste.
Rinse with cold water and enjoy with your favorite sauce.
