This rich and chocolatey mug cake contains no gluten, no grains and no refined sugar. It's made with nutrient dense almond flour and just a few pantry staples.
Combine almond flour, cocoa powder, baking soda, dairy free milk, oil, maple syrup or honey, and vanilla to mug and mix everything together until well incorporated. Add egg and continue to mix until well combined, about a minute.
Microwave mug cake on high for 90 seconds, then carefully remove the mug from microwave (mug is hot!) and top with chocolate chips, as desired. Please note chocolate chips are not paleo.

You can mix all the ingredients first in a bowl, then divide the batter between two small ramekins vs. one large mug. Be sure to adjust cook time when microwaving two small ramekins.Topping mug cake with chocolate chips would no longer render the mug cake paleo nor refined sugar free.You could also top the cake with chopped up fresh fruit, sprinkles, granola, dairy-free whipped cream or other toppings of choice.
