No-Bake Mini Chocolate, Peanut Butter, and Oat Cookies
These mini chocolate peanut butter oat cookies are truly delicious. I eat them when I get a snack attack, and one cookie is only 74 calories. One cookies satisfies my chocolate craving thoroughly. Make these cookies for daily snacking or as an impressive cookie at your next party or potluck. They will definitely be a hit, and they're kid-approved too!

Combine sugar, cocoa, butter and milk in a small pot and heat on low until butter is melted and sugar is dissolved. Remove from heat.
Add the oats, peanut butter and vanilla to the chocolate mixture and mix until well combined. You may need to use your hands and/or a spoon to incorporate everything well.
Use slightly wet hands to form about 35 small cookies. Roll into mini balls, then slightly flatten each ball into a round cookie.
Place each cookie on parchment paper and cool in the fridge before enjoying.
Store cookies in a zip top bag in your fridge. They will last for several days and still taste great.Be sure to use gluten-free labeled oats. While oats are naturally gluten free, they are cross contaminated with wheat during the growing and harvesting. Only labeled and/or certified gluten-free oats should be used. I recommend Bob's Red Mill Gluten-Free Quick Cook Oats.These cookies are meant to be mini cookies, so shape them into about 35 balls and flatten. You could make them larger cookies as well.
