Use your slow cooker to create a delicious recipe for your family. Cook chicken breasts inside your slow cooker with some store-bought teriyaki sauce. Top with a fresh pineapple salsa that makes this dish healthy, colorful and bursting with flavor!

Heat oil in a large pan over medium-high heat. Add onions and cook for 6-10 minutes until lightly browned. Add garlic and cook for 1 minute until fragrant. Turn off heat. Add ground ginger and mix well.
Add onion mixture on to of chicken breasts, then pour teriyaki sauce on top of everything.
Set your slow cooker to cook for 4 hours. Once cooked, use a fork to shred the chicken into small bits. The chicken will soak up the teriyaki sauce.
Pineapple Salsa
Combine pineapple, pepper, jalapeno, corn, green onions and cilantro in a large bowl and mix well. Add lemon juice and salt and pepper to taste and mix. Refrigerate until serving.

Do not cook chicken breasts longer than 4 hours in the slow cooker; otherwise chicken becomes mealy.If chicken breasts are really large, slice them in half lengthwise to create smaller breasts.San-J makes a gluten-free teriyaki sauce, which you can find at most grocery stores that carry gluten-free foods.Adjust teriyaki sauce to the amount of chicken use. Don't use too much sauce or you'll wind up with ultra-saucy chicken. 3/4 cup is just the right amount for about 4-5 average-sized chicken breasts.Serve over white or brown rice, optional. Pineapple goes well with this dish and enhances the flavor, but all other additions to the salsa are optional. Don't have ears of corn. Use canned corn, or swap for diced jicama instead.Optional toppings include sesame seeds and/or sliced green onions.
