2tbspfresh cilantrofinely chopped (omit if you don't like cilantro)
Kosher saltto taste (start with 1/2 tsp)

In a large bowl, mash the avocados with a fork or potato masher to the desired texture. For chunky guacamole, leave small chunks. For smooth guacamole, mash it well.
Add the chopped onions, cilantro, and lime juice and mix. Add 1/2 tsp of salt, mix, and taste. Add more salt, if needed, as well as fresh black pepper (optional).
Pair the fresh guacamole with your favorite chips and/or vegetables and serve immediately.
You can use red or yellow onions for this. Be sure to chop them finely or use a food processor to help get them finely chopped.If you oversalt the mixture, add more avocados or chopped tomatoes.Store leftover guacamole in a covered container. It will turn brown so mix it before eating it again. It will last for 1-2 days in your fridge.
