Prepare a baking sheet with foil. Use either nonstick cooking spray or olive oil to grease the pan. Set aside.
Make sure beans are dried. Lay them out on a paper towel in a single layer and allow them a bit of time to drain and air out.
Add beans to bowl along with olive oil (enough to coat each bean) and salt and pepper to taste. Mix together so each bean is coated in oil.
Add beans to prepared baking sheet in a single layer. Do not overcrowd beans.
Put beans in oven for 40 minutes total, however, set your time at 20 minutes to go in and shake the pan to move the beans around. You'll want to check them (and shake them) again at 30 minutes, and then babysit them as they get close to the end of their baking cycle. You'll see them start to slightly brown. They're done when they're crunchy to taste, but not burnt. Watch them carefully!
