If you're looking for a decadent dessert that is chocolatey and gooey, and offers hints of delicious coffee, look no further than this gluten-free chocolate pudding cake that oozes with warm chocolate pudding. It's made with gluten-free oat flour and is perfect for anyone who loves dessert but can't eat gluten, including people with celiac disease and gluten intolerance.

2tbspcacao powdercocoa powder okay
1 ¼ cupshot coffeeor hot water (see notes)

Instructions
Preheat the oven to 375º F. Lightly grease an 8x8" square baking dish and set it aside.
In a medium bowl, combine the oat flour, sugar, cacao powder, baking powder, salt, and chocolate chips.
In a second medium bowl, combine the milk, oil, vanilla extract, and egg (or flax egg).
Add the dry ingredients to the wet mixture and mix well using a wooden spoon or spatula until the ingredients are well incorporated. Pour the batter into the greased baking dish.
In a bowl, combine the remaining ⅓ sugar and 2 tbsp cacao. Evenly sprinkle the mixture on top of the batter. Don't worry; the cake will look messy.
Pour the hot coffee over the entire cake. Again, don't worry, it will look like a hot mess.
Place the cake in the oven and bake for 27-29 minutes until the cake is set and bubbling on top. Allow it to cool for a few minutes before digging in. Once cooled, top it with a sprinkle of powdered sugar (optional).
Notes
To Make a Flax Egg: To make a flax egg, combine 1 tbsp of flaxseed meal with 3 tbsp of warm water. Mix together and let it sit for five minutes to gel. Use the flax egg in lieu of an egg when making this recipe vegan.Coffee: To make coffee, use 1 tbsp instant coffee combined with 1 1/4 cups of hot water. Stir to combine. You want the coffee hot when you add it on top of the cake.Dairy-Free: If you're dairy-free, use dairy-free chocolate chips and dairy-free milk. I always use cashew milk, and it works perfectly every time. You could also use almond milk, soy milk, coconut milk, or another milk alternative.Don't Worry!! The cake will look like a mess before you put it in the oven. It's okay; it's supposed to look messy. It will bake up perfectly, I promise!
