1medium yellow onionfinely chopped
3garlic clovesminced
1tsppaprika
1tsporegano
1/2tspKosher salt
Fresh ground pepperto taste
4yellow potatoes (Yukon gold)diced
3large carrotspeeled and diced
1/2cuptomato sauce
1 1/2tbsptomato paste
1/2tsp red pepper flakesoptional (ok to use 2-3 tbsp of hot sauce instead)
3-4cupswater or broth
parsley chopped, for garnish
Instructions
Heat oil in a large pan over medium-high heat. Add the ground beef to the pan and break it up with a wooden spatula. Cook the beef until it's fully browned, about 8-10 minutes.
Add the onion, garlic, paprika, oregano, salt, and pepper. Mix and cook for another 2-4 minutes.
Add the tomato sauce, tomato paste, red chili flakes (or hot sauce), potatoes, and carrots to the pot. Stir the ingredients until the potatoes .and carrots are coated in the tomato sauce.
Pour water or broth over the mixture until all the ingredients are just barely covered. Bring the mixture to a boil, cover, and simmer on low (rolling boil) for 35 minutes. Remove the cover and simmer for 5-10 minutes to thicken the sauce and cook off excess water.
Garnish with fresh parsley and enjoy immediately.
Notes
Spice It Up: You can spice up this recipe by adding chili pepper flakes or siracha (hot sauce) to the mix. For extra heat, add 1 tsp of chili powder.About the Potatoes: I recommend using yellow Yukon gold potatoes. They have a creamy texture and are less starchy than russet potatoes. The starch from the potatoes will help thicken the water or broth.Ground Meat: Ground beef offers a delicious beefy flavor, but you could also use ground turkey.
