Combine apples and lemon juice in a medium bowl. Mix and set aside.
Combine flour, baking powder, cinnamon, and salt in a medium bowl. Whisk together and set aside.
Combine eggs, sugar and milk in a large bowl and whisk together.
Add flour mixture to the egg mixture. Mix until batter is well combined, then fold in apples until well combined.
Heat oil in a heavy bottom pan or Dutch oven until it reaches 375º F. Scoop in large spoonfuls of the batter into the oil to form misshapen circles. Cook until brown on one side, then gently flip to fry the other side.
Remove from oil and place on paper towel lined plate for 5 minutes before transferring to a wire rack to continue cooling. Do not completely cool fritters on a plate as the oil will make them soggy. Use a wire rack.
Glaze
Combine powdered sugar, water and lemon juice in a bowl until you get a smooth consistency that is thick, but still pourable. Add more or less water as needed.
Drizzle glaze over fritters while they're on the wire rack until they're fully coated. Allow the excess glaze to drip off. Allow the fritters 30 minutes or longer for the glaze to set before enjoying.

Nutrition information is approximate.To lessen the calories, you can air-fry the fritters instead. Scoop them into your air fryer basket and fry at 350º F for 8 minutes. Flip and cook for another 4-5 minutes until lightly browned on the inside and cooked through.For dairy-free apple fritters, use dairy free milk.I have not made them egg-free, but you could use an egg replacer. I have only made this recipe with Bob's Red Mill 1-to-1 Gluten-Free Flour blend in the blue bag. I cannot guarantee results with another gluten-free flour.
