Defrost gluten-free puff pastry dough as instructed on the package, or make your own gluten-free puff pastry dough from scratch. See notes.
Preheat oven to 400º F and line a baking sheet with parchment paper.
Roll out puff pastry dough to desired thickness (the thinner the better - about 1/2 - 3/4" thick).
Use a butter knife or pizza cutter to cut 24 even rectangles in the dough.
Wrap each mini hot dog with puff pastry rectangle. Pinch the dough together and place each hot dog seam side down on the baking sheet.
Bake for about 12 minutes or until puff pastry expands and lightly browns. Watch the cook time carefully to ensure the puff pastry doesn't burn.
Serve immediately with mustard (optional).

If you can't find puff pastry near you, you can make your own using my gluten-free puff pastry recipe (it's easier than you think!)You can use mini hot dogs, cocktail weiners, or cocktail sausages to make your pigs in a blanket. You can also cut a hot dog into 2-3" sized pieces and wrap each piece with the puff pastry.For an more browned look, brush the top of your puff pastry dough with egg wash before baking. This works well for the homemade puff pastry, but read manufacturer instructions carefully to see if it's okay with them.
