I love this salad and it's truly the perfect gluten-free lunch option for someone who loves salads too. I swapped feta cheese for fresh mozzarella to make my dream Greek salad. Enjoy!
Finely chop the lettuce, tomatoes, cucumber, olives and red onion into small, bite-sized pieces. Cube the mozzarella and cut the basil leaves into small strips. Combine all ingredients in a large bowl and mix well.
For the Dressing:
Combine all the dressing ingredients in a small jar, mix well, and top on your salad just before serving.
Notes
Traditional Greek salad is made with feta cheese. You can use feta cheese instead of fresh mozzarella, or omit the cheese altogether to make it dairy free.You may not need all the dressing. Use what you like (to taste) and reserve the rest for another day. I like to use old jelly jars to store homemade salad dressings. Refrigerate unused salad dressing.
