In one bowl, combine tapioca starch and seasonings and whisk together. Set aside.
In a separate bowl, combine egg with 1 Tbsp. of water and mix well. Set aside.
Heat oil in large non-stick pan over medium-high heat.
Working in batches, dip chicken strips into egg wash, then coat the chicken in the starch/seasonings. Place each chicken strip into hot pan. Do not overcrowd.
Cook chicken for about 3-4 minutes on each side until cooked through. Thicker pieces may take a bit longer to cook. If the outside of the chicken browns too quickly, lower temperature to medium heat.
Serve immediately with roasted potatoes and asparagus, or with other sides of choice.
