Why this recipe is great:
This recipe is seriously so easy to make. It takes only a few minutes to prep and cook up this delicious chicken recipe. I usually make it at least once a week.
You can use this recipe as the base to make Chicken Parmesan, Lemon Piccata chicken, basic chicken tenders, and more!
Add as much or as little flavor as you like. Play with the seasoning combinations – the possibilities are endless!
This chicken doesn’t taste like it’s been tampered with – you’ll never know this is gluten free. This recipe satisfies my craving for breaded chicken, something I miss having now that I’m gluten free.
Variations & Additions:
For Chicken Parmesan:
- Top with your homemade marinara sauce or jarred pasta sauce and shredded mozzarella cheese. Put in the oven to melt cheese (approximately 10 mins on 350 degrees). (Cook chicken for only 3 minutes on each side instead of as directed above. The chicken will finish cooking in the oven).
For Lemon Piccata Chicken:
- In the same large saucepan where you cooked the chicken, add 1/3 cup of fresh-squeezed lemon juice, 1/2 cup chicken stock, 2 tablespoons of butter, and 1/4 cup brined capers (rinse first). Scrape pan to loosen brown bits. For a thicker sauce, add 1 teaspoon of cornstarch and whisk mixture until thickened (add more cornstarch for thicker sauce).
For Chicken Tenders or Nuggets:
- Cut chicken pieces into desired size. Serve with your favorite condiment – ketchup, BBQ sauce, ranch dressing, etc.
