When I saw the infomercial on TV for the Veggetti, I had to have one right away! I’ve never been a huge fan of gluten free noodles – most don’t taste like regular pastas, they’re often triple or more the price, and they consist of empty calories.
Eating pasta all changed when I found the Veggetti. This little hourglass-shaped tool has become a staple in my dinner routine. I use it to turn a simple zucchini into a yummy pasta meal – getting rid of bad tasting, expensive pasta full of empty calories.
How It Works:
Twist a whole zucchini into the grater gently pushing as you go (you can use the thick or thin grater depending on how you like your pasta). You see fun swirls of zucchini pasta come out as you twist.
There are several ways you can prepare the raw zucchini once it’s shredded into the spaghetti-like threads. The easiest way is to microwave it covered for 90 seconds or under the desired texture is achieved. Microwave for a shorter interval for al-dente Veggetti, and longer for softer noodles. Alternatively, you can saute the Veggetti noodles in a saucepan with a few drops of olive oil, or eat raw.
I often top my zucchini pasta with yummy turkey meat sauce (click here for my Simple Turkey Meat Sauce recipe), and you can use it in place of pasta in your favorite Italian dishes. It is also the perfect side dish to chicken parmesan. As far as I’m concerned, the Veggetti is a must-have tool in any gluten free kitchen.
