As my Whole30 month rages on, I’ve been working on creating quick, easy and Whole30 compliant meals.

I think a lot of us Whole30 participants would agree that one of the hardest meals of the day is lunch.

Most people who work outside of the home need a portable, on-the-go lunch, which is hard to do when Whole30 ties you to a kitchen to prepare clean, whole foods. Remember, Whole30 compliant meals must be free from all grains (not just gluten), soy, sugar (and all forms of artificial sweeteners), alcohol, legumes, dairy and anything that contains sulfites, MSG and carrageenan.

Given that I’m a blogger, I work from home. I feel lucky that I can prepare and eat a hot lunch on my lunch break.

However, just because I’m home during the day doesn’t mean I’m not busy. I still need quick and easy lunch options so that I’m not wasting precious time away from my work. My kids are at school for only a short few hours, so I need to use my time wisely!

So, in my effort to come up with a quick, easy and delicious Whole30 compliant lunch, I came up with this recipe for a savory sausage and potato stir fry.

When you make this, you must make sure to purchase a sausage that is Whole30 compliant. One of the challenges of the Whole30 is finding sausage and bacon that doesn’t contain ingredients like sugar, soy or other strange ingredients that knock them out of Whole30 contention. I also don’t eat pork, so I am always looking for turkey and chicken sausage options.

I was excited to find Italian Chicken Sausage at Trader Joe’s that meets all the Whole30 criteria, and of course, are make with chicken vs. pork!

When I made this savory sausage and potato stir fry for lunch one day, I knew it was a keeper recipe. I simply sauteed the sausages along with all the other Whole30 okay ingredients in a pan with a little avocado oil, and then I added some Kosher salt and pepper to taste.

This meal hit the spot and was quite filling. It’s amazing how delicious food can be with just a little salt and pepper. You really can create great flavor with just simple and clean ingredients.

This Whole30 lunch takes about 5 minutes to prep, 10-15 minutes to cook, and about 2 minutes to eat. Score! It’s truly a quick, easy, delicious totally Whole30 compliant lunch!

Ingredients

  • 2 Tbsp. avocado oil
  • 2 Trader Joe's Italian Chicken Sausages (or other Whole 30 compliant sausages), diced
  • 2 cups diced potatoes of choice
  • 10 portobello mushrooms, stemmed and diced
  • 4 Tbsp. red onion, chopped
  • Large handful super greens (blend of spinach, kale and Swiss Chard)
  • 1 tsp. Kosher salt
  • Pepper, to taste

Instructions

  • Heat oil in a large skillet pan over medium high heat.
  • Add diced Italian Sausages and cook for 2-3 minutes.
  • Add red onion, mushrooms and diced potatoes and cook for 8-10 minutes, stirring often, until potatoes are softened and begin to brown.
  • Add super greens, salt and pepper and cook for another minute until greens are cooked down.
  • Serve immediately.
