Tips for converting Cake Pan recipes to a Pullman Pan -
Use a 9" x 9" x 4" Pullman Pan and follow a standard cake recipe which makes about 6 cups of batter and is equivalent to:
- 9" - 10" Tube pan
- 9" x 13" Rectangular pan
- three 8" Rounds
- two 9" Rounds
DO YOU NEED A LID?
- YES: for yeasted breads that will rise and push against lid, creating the classic square corners
- NO: quick bread that won’t "mushroom" over the top of the pan, just results in a nice tall loaf. But using a lid shouldn’t hurt!

Not me. I love the way bread slopes on the top from rising. And I love the shape these pans give to the bread when sliced. BEAUTIFUL -- and without the cover, creative too if you score it with a straight line down the middle (or wherever).
Be diligent NOT to use metal utensils with these pans. Due to the Americoat (registered trademark) coating. Under the silicone coating is aluminum and I don't want ANY of my bread touching aluminum. The best way to avoid that in these pans is to take GOOD care of them and not scratch them or bake them at too high of a heat. The manufacturer says they can handle up to 450 degrees F, but what if you are baking in an oven that runs hot? I won't chance it. I find that my wonderful "sandwich bread" bakes beautifully in these pans at 350 to 360 degrees F.

At first I was taken back by the fact this pan is 4" high which seemed a long way from the 2 1/2” standard. Fortunately I went on to read all the great reviews on this pan. The taller sides means no worries about a larger loaf rising to a huge muffin top that falls over the top edge of the pan.
With this USA pan I can bake a loaf of bread with the lid or off! Leaving the lid on I get a perfectly square loaf which allows you to make perfectly square sandwiches every time. However when the pan arrived… any and all thoughts of buyers remorse vanished as soon as I lifted it out of the shipping box. This pan screams QUALITY! Not only am I glad it's made in the USA but upon visual inspection it clearly shows the USA Pan company is a professional bakeware company in every sense of the word. Quality material, excellent manufacturing detail, beautiful finish etc.. Even my spouse said WOW when I handed it to her.

However I'm thrilled to report in this case… both sayings are true. You can buy this one with confidence! I'll definitely be looking to USA Pan for any future cookware needs.

Wished I'd discovered the King Arthur loaf tin years ago.
I make 100% wholemeal bread by using a Panasonic bread machine to mix the dough and do the first proving.
I used to let the bread machine do the whole job, but I don't like having a hole in the bottom of my bread :)
I make gluten-free bread and it's more batter than dough so it requires a higher pan to allow it to grow high without spilling over!
This pan was recommended by #robynsglutenfreebakingcourses and I now own two!
