Sweet and Gluten-Free BBQ Chicken

This chicken recipe is the best! The chicken stays moist and delicious inside and the skin crisps nicely on the outside. It's the best non-grilled BBQ chicken recipe I've had in a long time! If you don't want to exclusively use chicken thighs, you can use a whole cut up chicken (8 parts) or any bone-in chicken parts you like (breasts, drumsticks, etc.). Just watch cooking time as to not overcook chicken breasts.

Ingredients

4-6 bone-in chicken thighs

1 Tbsp. garlic powder

1 tsp. Kosher salt

Fresh ground pepper

1 cup gluten-free BBQ sauce

1 cup raspberry jam

1 cup soda (I used Hansen's Natural Soda - no diet sodas please)

Directions

Preheat oven to 400 degrees F.

Place chicken thighs in a large casserole dish and sprinkle with garlic powder, salt and pepper.

In a large bowl, add BBQ sauce, jam and soda. Mix well.

Pour mixture over chicken.

Place chicken in oven for 1 hour and 15 minutes, basting the chicken every 20 minutes with the juices.

Remove from oven and serve with corn on the cob, brown rice and other healthy fixings.

This recipe inspired by "Coke Chicken" in the cookbook, Perfect for Pesach. I do not like to use Coke because it has caffeine, and high fructose corn syrup. I prefer Hansen's Natural Soda - Original Cola. It's made with cane sugar instead of high fructose corn syrup. Sugar is sugar - but at least Hansen's has a clean ingredient list.
