Jicama & Mango Salsa

This Jicama & Mango salsa makes a great hot dog topper or can be enjoyed as a stand alone salad. I used all fresh, local and organic ingredients. Enjoy!

  • Yields: About 2-3 cups

Ingredients

1 cup of jicama, peeled and chopped into small cubes

1 large or 2 small mangoes, peeled and cut into small cubes

½ cup of cucumber, peeled and cut into small cubes

½ cup yellow bell pepper

½ cup red bell pepper

2 scallions (green onions), chopped

Juice of 1 lemon

2 Tablespoons of chopped fresh cilantro

Sea salt and fresh ground pepper to taste

Directions

In a large bowl, mix all chopped ingredients.

Add lemon juice.

Add sea salt and pepper to taste.

Serve over hot dogs and sausages as a "slaw" topping.
