This dish is a refreshing side to any grilled meat or BBQ!
1 English cucumber
1/2 small red onion
1 red bell pepper
1 yellow bell pepper
1 ripe mango
Zest of one lemon
Juice of 1/2 lemon or more to taste
4 tablespoons of olive oil or more to taste
Salt and pepper to taste
1/4 cup of chopped fresh herbs, such as Italian Parsley, mint and/or cilantro
Note: I omitted tomatoes, but traditional Israeli salad would include 2 large tomatoes, diced
In a large bowl, add finely diced cucumber, onion, peppers and mango.
Next, zest lemon and add zest to mixture.
Squeeze lemon juice from lemon and pour over mixture.
Add fresh herbs, olive oil and salt and pepper to taste.
You can't go wrong, add more lemon juice, olive oil and herbs to taste.
