Hazelnut Flour Chocolate Chip Cookies

Hazelnut flour offers a rich, moist, nutritious, and totally grain-free (paleo) alternative to regular gluten-free flour blends that often contain rice flours. Hazelnut flour is made from ground hazelnuts, which are high-fat, high-calorie tree nuts that offer up many nutritional benefits including high levels of important polyphenols and antioxidants.

1/2 cup brown sugar

6 Tbsp. butter - room temperature

1 large egg

1 tsp. vanilla

2.5 cups Honeyville Hazelnut Flour

2 Tbsp. flaxseed meal

1/2 tsp. baking soda

Pinch Kosher salt

1/2 cup chocolate chips


Heat oven to 375 degrees.

Line baking sheet with parchment paper or silicone baking liner

In your standing mixer, cream together butter and sugar for about 30 seconds until well blended.

Add egg and vanilla and mix well on medium speed until combined.

In a small bowl, blend together flour, flaxseed meal, baking soda and salt.

Slowly add dry flour mixture into wet mixture until evenly mixed.

Fold in chocolate chips by hand.

Scoop small handful of the dough and roll with your hands into approximately 15 2-inch dough balls. Set each ball on baking sheet about 2 inches apart as the cookies will slightly spread.

Once all the dough balls are on the baking sheet, press gently on each to slightly flatten them.

Bake for 10-12 minutes until dough is set and edges are lightly browned.

Remove from oven and cool before serving.

Don't omit the ground flaxseeds! The cookies are very moist due to the high fat content of the hazelnut flour. I had to experiment a lot to get these just right. The flax will aid in soaking up the excess moisture and is essential to holding the cookies together.
