Gluten-Free Rice Crispy Treat Sushi

It's fun to make gluten-free rice crispy treats and even more fun to make rice crispy treat sushi! Enlist your kids to help you assemble the sushi... then enjoy eating the sweet treats for dessert.

  • Yields: About 16-20 rice crispy sushi rolls


3 Tbsp butter

4 cups mini marshmallows

6 cups Erewhon gluten-free brown rice cereal

1 package Swedish fish

Fruit-By-the-Foot or other fruit tape product

1-3 Tbsp white icing


To prepare the rice crispy treats, melt the butter in a large pan over medium heat.

Once butter is melted, add marshmallows and stir often until they are all melted.

Turn off heat.

Add cereal and stir well.

Add cereal mixture to a well-greased casserole dish (9x11in) and press mixture to form an even layer. If mixture it too sticky to handle, grease the bottom of your spatula or your hands to help press down mixture without sticking.

Allow cereal to cool completely, about 1-2 hours.

Cut cereal into small rectangular shapes and set aside.

To assemble your rice crispy sushi, wrap each rectangle with a strip of the fruit tape.

Add a dab of icing to the top of the fruit tape, and then place the Swedish fish on top.

Serve on a sushi platter for an extra fun flair!
