Easy and gluten free recipe for Protein Energy Bars.
1 cup gluten free oats
1/2 cup dried cranberries or raisins
1/2 cup protein powder (make sure it's gluten-free)
1/2 cup milled flax seed
1/2 cup natural peanut butter or almond butter
1/2 cup honey
1/2 cup chocolate chips (I used Enjoy Life chocolate chips, but your favorite gluten free chips will work!)
Cover a flat pan or baking sheet with parchment paper. Set aside.
In a large bowl, combine all ingredients. Mix well by hand (you may want to use gloves, it's sticky!).
Once mixed well, roll a portion into a ball. If mixture is too sticky, add a little water to your hands prior to rolling.
Add ball to parchment paper and continue rolling mixture into balls until gone.
Put in refrigerator to harden, and then transfer to a smaller dish, bag or bowl for easy storage. (Keep refrigerated or freeze)
If you want to make energy bars, simply add mixture to parchment lined 8"x8" baking pan. Press mixture down and refrigerate. Cut into small squares and enjoy!
Add more or less protein, chocolate chips, dried fruits, seeds, etc. This is your energy bar - adjust to taste!
