This is a quick and delicious way to enjoy asparagus as a side dish as your next dinner party or weeknight meal!
2 lbs asparagus, with bottom ends trimmed off
2 Tablespoons olive oil (divided)
Salt and pepper
1/3 cup grated Parmesan cheese
1/3 cup gluten-free panko breadcrumbs (I used Ian's brand)
Zest of one lemon
Preheat oven to 425 degrees F.
Prepare a baking sheet with foil.
Add asparagus, salt and pepper, and 1 Tablespoon olive oil to a large bowl and toss.
Add mixture to baking sheet and bake for 10-12 minutes until asparagus is al dente.
While asparagus is baking, combine remaining olive oil, cheese, lemon zest and breadcrumbs in the bowl. Set aside.
Transfer asparagus to an oven safe baking/serving dish.
Top asparagus with cheese mixture and bake for an additional 2-3 minutes until cheese is melted and slightly browned.
