Gluten Free Apple Pie Crumb Bars

Enjoy this slightly different but just as tasty version of apple pie - gluten free style of course!

Ingredients

Crumb Base & Topping (if only making topping, cut this recipe in half - you won't have bars but you'll have a wonderful apple pie crisp)

2/3 cup honey

3/4 cup softened butter

1 egg

1 3/4 cup brown rice flour

3/4 cup tapioca starch

3/4 teaspoon xanthan gum

1 teaspoon baking powder

1/4 teaspoon salt

1 cup gluten free oats

Apple Filling:

5 apples (I recommend a few more if you like lots of apples!) - peeled and diced into 1 inch pieces (I used a mixture of different apples)

1/3 cup maple syrup

2 tablespoons butter

2 tablespoons lemon juice (about juice of 1 lemon)

1/4 cup tapioca starch

1 teaspoon cinnamon

Directions

Preheat oven to 350 degrees F

First make the crumb mixture. In an electric mixer, combine 3/4 cup softened butter with honey. Beat until mixed well.

Add egg and mix for another 30 seconds.

In a separate bowl, combine dry ingredients (brown rice flour, tapioca starch, xanthan gum, baking powder, salt and oats). Mix together.

Slowly add dry ingredients to wet mixture until well combined.

Grease a 9 x 13 casserole dish. Add 2/3 of crumb mixture. Reserve 1/3 for the topping. You'll want to press the mixture evenly onto the bottom. Because the mixture is sticky, you will want to use wet hands when pressing dough on bottom of pan.

Next make the apple fie filling. Start by melting 2 tablespoons butter in a pan over medium high heat. Add apples and syrup. Cook for 5-7 minute until apples soften.

Add lemon juice, tapioca starch and cinnamon. Cook for additional 3-4 minutes.

Pour apple pie filling over dough. Top with remaining 1/3 crumb dough.

Bake for 35-40 minutes until crumbs on top begin to slightly brown.

Allow to cool before cutting into squares or serving.
