Gluten-Free Carrot Souffle

Try this delicious and feels-like-fall carrot souffle. It's totally gluten-free and adds a little touch of sweetness to your festive fall meals.

2 lbs carrots, peeled and chopped into four sections

1/2 cup butter (1 stick)

3 eggs

1 tsp. vanilla extract

2 Tbsp. gluten-free all purpose baking flour

1/4 cup brown sugar

1/4 cup white sugar

1/2 tsp. Kosher salt

1 tsp. baking powder

1/2 tsp. cinnamon (optional)


Bring a large pot of salted water to a boil and then add carrots. Cook carrots at a rolling boil until soft, about 30 minutes.

Preheat oven to 350 degrees.

Lightly grease a 9x13 in glass casserole dish.

Drain and mash carrots. Add butter, vanilla and eggs and continue to mash all ingredients together. Use your handheld immersion blender to get a smooth texture to your mixture. Set aside.

In a medium bowl, combine flour, sugars, salt and baking powder.

Add flour mixture to carrot mixture and mix well until smooth.

Transfer mixture into casserole dish and lightly sprinkle with cinnamon (optional).

Bake for 45 minutes and serve immediately.

This carrot souffle makes an excellent side dish. Try swapping carrots for canned pumpkin for another fun festive fall side dish.
