An Ode to Gluten-Free Muffins by Garden Lites

When the craving for something that tastes like bread but is gluten-free hits, it’s good to know you have a tasty and easy go-to option ready on a moment’s notice. Garden Lites muffins are that go-to option for me.

Garden Lites makes the most delicious gluten-free muffins using ingredients you recognize and feel good eating. In fact, the ingredient list packs a huge nutritional punch. Each Blueberry Oat muffin, for example, is only 120 calories and contains 5g of fiber and 3g of protein. Check out the full ingredient list for yourself:

Zucchini, Gluten Free Flour Blend (Brown Rice Flour, Sorghum Flour, Corn Starch, Certified Gluten Free Oat Flour, Flaxseed Meal), Egg Whites, Sugar, Whole Eggs, Blueberries, Soluble Corn Fiber, Certified Gluten Free Oats, Dried Blueberries (Blueberries, Sugar, Sunflower Oil), Carrot, Canola Oil, Baking Powder (Sodium Acid Pyrophosphate, Sodium Bicarbonate, Cornstarch, Monocalcium Phosphate), Blueberry Flakes (Blueberries, Cane Sugar, Natural Blueberry Flavor), Salt, Vanilla Extract

My personal favorite muffin variety is the Blueberry Oat Muffin, but I’ve also enjoyed the Banana Chocolate Chip and Carrot Berry muffin varieties too.  The Blueberry Oat muffin is sweet (but not over-sweet), doughy (like you remember gluten-y muffins tasting), and there is a generous amount of blueberries to pop in your mouth. I’ll enjoy one as an afternoon pick-me-up, or often eat one (or two) in the morning for breakfast.

So next time you’re craving a sweet snack, or want a seriously delicious gluten-free muffin for breakfast, pop a frozen Garden Lite muffin in the microwave for 35 seconds and enjoy this delightful treat for yourself.  This product definitely makes my recommended gluten free products list!Garden Lites at Costco

You can buy Garden Lites products at your local grocery store (frozen food section), on Amazon, or the chocolate muffins made with zucchini and carrots at Costco (as of January 2016). The chocolate muffins available at Costco come 14 muffins to a package (which you will fly through, trust me!) and are gluten-free, dairy-free and only 120 calories per muffin.
