My daughter is turning eight and for her birthday, she asked if we could make cupcakes together instead of buying a cake. How in the world could I turn that request down?!? That said, I told her if we make the cupcakes in our kitchen, they of course have to be gluten free. She agreed.
Between all the running around getting ready for her party, I just didn’t have time to whip up a batch from scratch. So I headed over to Natural Grocers to see what I could find. I selected a cake mix I hadn’t tried before by Namaste. It’s a company I have heard about but hadn’t tried for myself – so no time like the present to try it and share my thoughts with my readers here on the Good For You Gluten Free blog. I like that Namaste products are free from eight common allergens (wheat, gluten, corn, soy, potato, dairy, casein, tree nuts and peanuts). I was catering to others who were not only gluten free, but also dairy and corn free – this would be the perfect mix! My daughter and I whipped up a batch in no time. The instructions were easy to follow and the cupcakes baked up beautiful and fluffy. My daughter and I taste-tested one right out of the oven – we were in heaven! They were chocolate-y and decadent – we knew we were going to serve up great cupcakes for her birthday party and no one was going to even know they were gluten free!
To top the cupcakes, we whipped up a from-scratch buttercream frosting using powdered sugar, butter, milk and vanilla and then topped our creations with some store-bought candy flowers. (I hate using store-bought frosting – too many artificial ingredients.)
Voila – a beautiful, delicious and gluten free cupcake awaited our guests. (Note: I didn’t frost all of the cupcakes so my dairy and corn free friends could enjoy them too – the buttercream frosting had milk and the powdered sugar had corn starch in it).
I am happy to report the birthday cupcakes were a success thanks to a wonderful cupcake mix by Namaste, and some fun mother-daughter bonding time in the kitchen. Happy child, happy party, happy mama!
