Latigo Mexican is a Delicious Gluten-Free Restaurant in LoDo Denver

Our December Denver Blogger’s Event was held at a contemporary Mexican restaurant called Latigo. Latigo is across the street from Coors Field and is beautifully decorated to reflect the modern style of downtown Denver while also incorporating colorful accents that signal an authentic Mexican style. The owner, Chef Ignacio Leon, is from Mexico City and comes from a family of 11 children! General Manager, Jose Sotelo, said that Leon’s mom makes all the tortillas for the restaurant too and that Latigo is a family affair.

In full disclosure, Latigo sponsored our Denver Bloggers Club event and provided free food to all our members, including me. If I didn’t like the restaurant, I would not write about it… but in all sincerity, I could not have been more impressed with the food, atmosphere and staff.

Latigo offers up a generous gluten-free menu and all the food is prepared with detail and attention. I was able to enjoy everything the restaurant planned to serve us bloggers that day. Check out this menu!

The meal started with homemade corn chips (the chips are cooked in a dedicated fryer) and a variety of salsas varying in spice. It also started with a margarita – cheers! Then came the Ceviche de Camaron, a beautiful display of shrimp, onions, tomatoes, serrano chilies, and avocados. The flavor profile was incredible. Sotelo says everything is marinated for 24 hours to allow all the flavors to fully develop.

I also had the pleasure of enjoying the Tinga Tostada, which is a corn tortilla topped with shredded beef, lettuce and other vegetables. Sotelo says the beef takes 4-5 hours to slow cook. This level of detail ensures a beautiful flavor profile.

The fajitas were also delicious. Sotelo says the secret is cooking the chicken separate from the vegetables, then combining them upon serving.

The meal was topped off with a Hot Smoky Horchata beverage (it was like a hot chocolate spiked with Patron).

Everything, and I mean everything, was so delicious. I ate my way through Latigo!

Latigo opened in June 2016, so it’s fairly new to the area. The restaurant owners pride themselves on serving up authentic yet modern Mexican food.  This is not just a Mexican restaurant that throws around Americanized Mexican fare; rather the dishes are thoughtfully prepared and authentic to modern Mexican cuisine.

On another note, our December Denver Blogger’s Club meetup was a lot of fun!
