I’d like to share with you today a gluten free recipe for Israeli Salad.
I find Israeli Salad to be full of bold flavors, fresh herbs, and all around healthy ingredients. What makes an Israeli Salad different from a regular salad is that Israeli salads include finely chopped vegetables. Traditional Israeli Salads include diced tomatoes and cucumbers, and can include a variety of other crisp vegetables and herbs. It’s generally topped with fresh lemon juice and/or olive oil.
The beauty of Israeli Salad is you can mix and match ingredients to your liking. I decided to use a slew of fresh vegetables, fruits and fresh herbs I had on hand to create this wonderfully flavorful salad. Let’s just say I can’t wait to make this again – it’s that good and of course, good for you!!
I used this dish as a topping to grilled chicken rice bowls. It also can be a fabulous topping for grilled fish, meats, or simply a wonderful side dish at your next BBQ or dinner party.
- 1 English cucumber
- 1/2 small small red onion
- 1 red bell pepper
- 1 yellow bell pepper
- 1 ripe mango
- Zest of one lemon
- Juice of 1/2 lemon or more to taste
- 4 Tbsp olive oil or more to taste
- Salt and pepper to taste
- 1/4 cup chopped fresh herbs, such as Italian Parsley, mint and/or cilantro
- Note: I omitted tomatoes, but traditional Israeli salad would include 2 large tomatoes, diced
In a large bowl, add finely diced cucumber, onion, peppers and mango.
Next, zest lemon and add zest to mixture.
Squeeze lemon juice from lemon and pour over mixture.
Add fresh herbs, olive oil and salt and pepper to taste.
You can't go wrong, add more lemon juice, olive oil and herbs to taste.
