I talk about my love affair with french fries, and how I’ve tried to make french fries using a variety of vegetables, such as turnips, eggplants, green beans and now zucchinis. I also talk about unhealthy deep fried french fries can be, and the major risk of gluten cross contamination within a deep fryer at many restaurants.
If you’re going to cook and bake with almond flour, you might as well use the best almond flour around. I highly recommend Honeyville Almond Flour*. It’s the only almond flour I use and the texture is perfect every time (do not use Bob’s Almond Flour – not the same texture).
You can store the fries in an airtight container and heat up in the toaster oven for crispy fries the next day.
Notice the crispy texture (thanks to the almond flour on the outside), and the moist and tender zucchini on the inside. It’s love at first bite!
- 2 medium zucchinis
- 2 large eggs
- 1 lemon
- 1 tsp. salt + 1 pinch of salt
- 1 tsp. garlic powder
- Pinch of black pepper
- 1 Tbsp. water
- 1/2 cup gluten-free rice flour (approximate)
- 3/4 cup Honeyville Blanched Almond Flour (approximate)
Preheat oven to 450 degrees
Prepare a baking pan with cooking spray, or use parchment paper
Cut each zucchini into 8 "french fries" - first cut in half lengthwise, then divide each half into four even cuts, again cutting lengthwise.
Combine eggs, water, 1 teaspoon salt, garlic powder, pepper and juice of 1/2 lemon - mix well
Dip each zucchini fry into the rice flour
Next, dip the flour-coated zucchini fry into egg mixture. Coat evenly and shake off excess egg.
Dip egg-coated zucchini fry into almond mixture. Generously coat.
Lay each fry on the baking sheet. Do not overcrowd - give each fry plenty of space.
Generously coat the fries with an olive oil spray. Sprinkle salt over the sprayed fries.
Bake in oven for about 25 minutes or until flour mixture starts to brown.
Garnish with excess lemon and serve immediately - enjoy with a marinara dipping sauce (optional).
