I am not sure why I keep talking about Whole Note’s gluten-free baking mixes. I’m not getting paid and I don’t work for the company. I guess the only explanation is that I have a major crush on Whole Note!
I discovered Whole Note Baking Mixes early on in my gluten-free blogging adventure. (This may be why the company holds a special place in my heart.) A PR person offered to send me some to try. I accepted. I didn’t realize that I’d still be harboring such a crush on these mixes more than a year later!
When I ordered a few boxes of Whole Note Baking Mixes online the other day, the owner (Paul) threw in a few additions for me to try. I hadn’t ordered nor tried the Create-A-Muffin-Mix, which he included for free, so I decided to give it a go. I had already fallen in love with the gluten-free pumpkin bread mix, and use the gluten-free flour blend quite a bit too.

Using the simple instructions on the back of the box, I set out to create my own muffin mix. I mixed together a few ingredients plus some frozen organic blueberries I had on hand in the freezer, and voila, my gluten-free muffin masterpiece was ready.
My family could hardly wait for these muffins to cool before we ate them up. They went fast! We each ate two the night I pulled them out of the oven, leaving us with four muffins to enjoy the next day for breakfast.
