This post is for all my paleo friends looking to make (and eat) paleo pancakes again.

Bob’s Paleo Pancake & Waffle mix is made from only ingredients that I know (and can pronounce) including almond flour, arrowroot starch, organic coconut flour, organic coconut sugar, sea salt, cream of tartar and baking soda. Who knew just a few clean ingredients mixed together could taste so good.
In addition to geeking out on the clean ingredient list, I also love that the Paleo Pancake mix is made primarily of almond flour. I’m a bit of an almond flour junky, always trying to find new recipes and baking mixes that include this protein-rich, grain-free ingredient.
How to Make the Paleo Pancakes
In order to make the paleo pancakes, you need to combine 1 cup of the baking mix, 2 eggs, 1/4 cup of water and 1 Tbsp of melted coconut oil. I don’t use coconut oil, so I simply swapped that ingredient for avocado oil and it worked perfectly. Did I mention that these paleo pancakes are also dairy-free – score!
As my kids were enjoying their last week of summer break, I decided I would make them some special pancakes. Shhh! Don’t tell them.
As a mom who loves to cook, I often show my love through food. So I decided I would make them a memorable breakfast that they would absolutely LOVE. I had a lot of confidence in this Paleo Pancake mix. My kids love everything that’s gluten-free (as evident of them eating all my fun food!), and they love almond flour too, which is good because I bake with it often.
To ensure maximum breakfast surprise and enjoyment, I pulled out our emoji pancake pan. Aren’t these smiling pancake faces adorable?
Taste Testing the Paleo Pancakes
Now for the taste test.
One of the emojis pancakes didn’t take shape well, so I decided to scarf that one down before I even showed my kids my breakfast creations. Yummy! The paleo pancake was light, fluffy and tasted like a real pancake. If I didn’t make these pancakes myself, and hadn’t read the label with my own eyes, I would have been worried sick that they contained gluten!
I then created a fun plate for my kids with smiley face pancakes and a ripe mango that looked like the sun. How could they resist devouring this adorable plate?
I’m happy to report that my kids loved every bite. They ate every pancake I gave them and then some! There weren’t any paleo pancakes left for me (good thing I snarfed down the defective one before I handed the plates over to my hungry kids). Next time, I’ll double the recipe to ensure there’s enough for me too.
Let’s just say my kids were super duper happy after snarfing down all those pancakes. I got compliments and hugs too – not bad to get all this love before 9:00 am!
The Perfect Paleo Breakfast

Knowing how filling these paleo pancakes are – as well as how yummy they taste too – means I have found the perfect breakfast item for my kids when they go back to school. I’m saving the rest of the package to make next week to help send off my kids to school with full bellies. No mom wants her kids to suffer from rumbling tummies before lunch. I know my kiddos are going to be full and satisfied!
