Dairy-Free Mango Mousse with Chocolate Candy Magical Shell Topping

I’ve never been a huge fan of ice cream. I mean, I eat it, but it’s not my favorite thing.

Since making this “I don’t love ice cream” confession, I can see that I’ve lost you. You’re probably wondering what is wrong with me and how in the world is it that I don’t love ice cream!

In full transparency, I love the sweetness, taste and cold texture of ice cream; but what I don’t love is dairy; or maybe I should say, dairy doesn’t love me. It doesn’t digest well in my body. I eat dairy on occasion, but prefer plant-based “dairy” alternatives instead.

However, when my client at So Delicious® told me about the brand new dairy-free So Delicious frozen mousse desserts, my ears perked up for two reasons:

(1) It’s dairy-free! That’s right, these pints of deliciousness contain no dairy, gluten, lactose, casein, carrageenan, egg and MSG. Whew! On top of that, they contain no artificial colors or flavors either.

(2) Each pint of So Delicious non-dairy frozen mousse dessert contains 330 or fewer calories. That’s right – the ENTIRE pint (not just one serving) is 330 or fewer calories. That means if you’re having a bad day and you need to entire carton – grab a spoon and dig in. So Delicious has your back!

On top of being dairy-free, it also tastes fantastic. It tastes similar to ice cream, however, it’s less thick and hard, and more soft and creamy. Each bite lands like a pillow on your tongue.

How to Make a Chocolate Candy Coating

While you could easily enjoy this frozen mousse as is (yes, it’s that good!), I have a few ideas for making this wonderful frozen dessert even more fun to eat.

First off, I highly recommend adding chocolate to anything and everything. One of the ways you can do this is to make your own chocolate sauce topping. The chocolate sauce recipe I share below is magical; when you pour the liquid chocolate sauce over something cold, it hardens to create a magical shell topping.

There is a brand that makes a chocolate syrup that magically turns into a hard candy shell, but I prefer to make my own with just two simple ingredients I already have in my pantry:  Semi-sweet chocolate chips and coconut oil.

I use less ingredients and it costs much less when I make the magic chocolate sauce myself. Plus, Sprouts’ semi-sweet chocolate chips are dairy-free, too.

To make your own magic chocolate shell topping, combine the semi-sweet chocolate chips and coconut oil in a medium bowl.

Then, microwave the mixture until the chips are fully melted, stopping every 30 seconds to stir it. It takes about 2-3 minutes to completely melt. The sauce is thick but is smooth as pictured below.

Allow the chocolate sauce to cool for five minutes before pouring it on top of the So Delicious frozen mousse. While melted chocolate chips will harden when left out more than 10 minutes, this chocolate sauce will stay in a liquid form until it touches something cold. Ah, gotta love when science meets kitchen!

… as you can see, within seconds the chocolate sauce completely hardened!

Immediately after pouring the chocolate sauce atop the So Delicious frozen mousse dessert, be sure to add toppings, like sprinkles or shreds of coconut. You can also stick a gluten-free sugar cone on top to make the dessert look pretty. The chocolate candy magic shell will continue to harden and eventually secure the sugar cone in place. Work fast as the chocolate sauce hardens quickly!

However, I’ve also taken a liking to the So Delicious Mango Swirl frozen mousse. It’s so creamy and you can taste bits of mango in almost every bite. If you love mango, you’ll LOVE this dessert.

To elevate the mango experience, I added diced fresh mango to the bottom of my sundae cup, then topped the sundae with the So Delicious Mango Swirl frozen mousse dessert, my homemade magical chocolate sauce and shreds of coconut.

Caring for that Magical Chocolate Sauce

The best way to store the chocolate sauce is in a sealed jar (I use a clean jelly jar). No need to refrigerate. Just store it in your pantry. The sauce may harden a bit over time, and if it does, just zap it in the microwave for 30-60 seconds until it’s melted and pourable again.

More About that Frozen Mousse Dessert

So Delicious frozen mousse comes in so many wonderful flavors. I highly recommend picking up a few cartons to see which one you like best. I purchased the mango swirl and chocolate chip flavors (and they are quite good – definitely keepers!), and I can honestly say I can’t wait to try the other flavors, too. I just need to free up some freezer space before buying more. The other flavors include cranberry cherry swirl, strawberry swirl, lemon swirl, peanut butter swirl, and salted caramel swirl.

Chocolate Candy Shell Topping

This magical chocolate sauce requires only two ingredients and two minutes in the microwave. Wow! When the chocolate sauces touches something cold, like ice cream or a frozen banana, it freezes on contact, creating a hard, candy shell. This magic shell topping is the perfect topping for any and all ice cream lovers!

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 2 Tbsp coconut oil
  • 1 scoop So Delicious Frozen Mousse Dessert

Instructions

  • Add chocolate chips and coconut oil to a medium-sized microwave safe bowl.
  • Microwave on high heat in 30 second intervals for 2-3 minutes or until mixture is melted. Every 30 seconds, stop microwave and mix well.
  • Allow mixture 5 minutes to cool before adding it atop a scoop of your favorite frozen treat, like So Delicious Frozen Mousse Desserts. 

Notes

(1) Chocolate sauce can be stored in a glass jar with a top.
 
(2) If chocolate sauce hardens, simply microwave it in 30 second intervals until it's liquid and pourable again.
 
(3) Chocolate sauce stores well. Use within one year (or sooner, fresh is always best).
