One of the exciting items in the Send Me Gluten Free Subscription Box that arrived a few weeks ago included the Chebe Focaccia Mix. Most gluten free breads try to taste good, but most fail. But Chebe has a magical recipe that includes shredded cheese! Obviously these mixes aren’t meant for the dairy-free crowd, but the gluten free crowd will love these delicious bread mixes and will find the mixes satisfy that gooey bread craving you’ve had since the day you went gluten free!
The bread mix was fairly easy to prepare, but did take some time. Basically I mixed the focaccia mix with 2 tablespoons of olive oil, 2 eggs, and 1 cup of shredded mozzarella cheese. Then I added 1/4 cup of water to the mixture and kneaded the dough with my hands until all the ingredients were evenly combined.
I then evenly distributed the dough ball in an ungreased 9″ pie pan, brushed the top with olive oil, and sprinkled about two pinches of kosher salt and some dried rosemary and thyme on top. I put in a 375 degree oven for about 35 minutes.
I couldn’t wait to taste test the gluten free speciality bread… and I must say it is 100% delicious! I had to pace myself not to eat the entire thing in one sitting! The middle is spongy (look at the middle of this slice of bread – doesn’t it look amazing?!?), as bread should be. The crust is a crisp but not hard. I could taste the hint of kosher salt and rosemary and thyme seasonings on top (very subtle yet they added just the hint of flavor needed!).
My 7 year old daughter loves the bread too. She can’t get enough of it.
The bread stores well. I put the remainder of the bread in a Ziplock baggie in the fridge. I simply heated a slice in the microwave for 15-20 seconds when I was ready to eat more. It still tasted delicious and doughy.
I WILL be making this bread mix again. I think it makes for a fantastic appetizer to serve alone or alongside a gluten free roasted eggplant dip spread or with a bruschetta topping.
